Some of the larger suites (Adobe, Office and so on) leave massive files behind if not uninstalled properly. An old kernel extension, no longer fully compatible with the current OS version can cause instability. And so on and so on. If (and that's a big if) all apps were well behaved then an uninstaller wouldn't be needed.
